About the recipe
Curl up with this warming winter salad featuring maple-toasted pumpkin seeds and walnuts. Serves 4.
Ingredients
For the dressing:
- ¼ cup olive oil
- 1 tbsp champagne vinegar
- 1 tbsp balsamic vinegar
- 1 healthy squeeze fresh lemon
- 1 tbsp maple syrup
- 1 tsp garlic power
- 1 tsp nutritional yeast
- 2 tsp red pepper flakes
- Sea salt & fresh-cracked pepper
For the salad:
- 4 large handfuls baby kale
- ½ shallot, thinly sliced
- 1 sweet and crisp apple, thinly sliced
- ½ cup pomegranate seeds
- ½ cup pumpkin seeds
- ½ cup walnuts
- 1 tbsp maple syrup
- ½ cup feta cheese
- Sea salt & fresh-cracked pepper
Directions

First make the dressing: Combine all the ingredients in a small bowl and whisk together. Taste and adjust.
- Next, toast pumpkin seeds, walnuts and maple syrup in a small pan on low heat until fragrant and lightly browned.
- To assemble the salad, toss the baby kale, shallot, apple, pomegranate seeds and toasted pumpkin seeds and walnuts in a large bowl. Crumble the feta on top. Add a small amount of dressing at a time and toss until it’s at your desired consistency. Finish with a generous pinch of sea salt and lots of fresh-cracked pepper.
Option: Add rotisserie chicken on top for a more hearty meal.
