Summer caprese salad

A great caprese salad starts with great ingredients! Caprese salads are meant to be enjoyed during the summer, when tomatoes are at their juiciest and sweetest. I like to stop by the farmers market and collect as many colorful types of tomatoes as I can.

For this recipe I went with beefsteak tomatoes as I wanted a uniform color and shape, but don’t be afraid to use other varieties, as each type brings slightly different texture and taste and will keep things interesting.

Serves 4.

Ingredients

  • Fresh mozzarella, sliced
  • 4 beefsteak tomatoes
  • Extra virgin olive oil
  • Flaky sea salt and pepper to taste
  • Willo basil

 Nufar Basil

Directions

  1. Layer alternating slices of tomatoes and sliced mozzarella, adding a leaf of basil in between each, on a large, shallow platter. Drizzle the salad with extra virgin olive oil and season with flaky salt and pepper to taste.
