Baby kale feta and date salad

This simple yet hearty salad will satisfy your taste buds and provide you with the health benefits you need to stay energized throughout the day.

Ingredients 

For the salad:

  • 4 large handfuls Willo baby kale
  • ½ small sweet onion, thinly sliced
  • 1 whole avocado, sliced or diced 
  • 4 medjool dates, pitted and diced
  • ½ cup feta cheese
  • Sea salt 
  • Fresh-cracked pepper 

For the dressing:

  • 3 tbsp olive oil 
  • 1 tbsp white balsamic vinegar 
  • 1 healthy squeeze of fresh lemon 
  • 1 tbsp maple syrup 
  • 1 tsp dried oregano 
  • Sea salt
  • Fresh-cracked pepper

 Baby Kale

Directions

  1. First make the dressing: combine all the ingredients in a small bowl and whisk together. Taste and adjust. If too acidic, add a splash more of maple syrup.
  2. To assemble the salad, toss the baby kale, sweet onion, avocado and dates in a large bowl and crumble feta on top. Add a small amount of dressing at a time and toss well until it’s at your desired consistency. Top it off with a generous pinch of flaky salt and add a healthy amount of fresh-cracked pepper.
