Ingredients
For the salad:
- 4 large handfuls Willo baby kale
- ½ small sweet onion, thinly sliced
- 1 whole avocado, sliced or diced
- 4 medjool dates, pitted and diced
- ½ cup feta cheese
- Sea salt
- Fresh-cracked pepper
For the dressing:
- 3 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 1 healthy squeeze of fresh lemon
- 1 tbsp maple syrup
- 1 tsp dried oregano
- Sea salt
- Fresh-cracked pepper
Baby Kale
Directions
- First make the dressing: combine all the ingredients in a small bowl and whisk together. Taste and adjust. If too acidic, add a splash more of maple syrup.
- To assemble the salad, toss the baby kale, sweet onion, avocado and dates in a large bowl and crumble feta on top. Add a small amount of dressing at a time and toss well until it’s at your desired consistency. Top it off with a generous pinch of flaky salt and add a healthy amount of fresh-cracked pepper.
