About the recipe
We created a bountiful, delicious recipe to change up your salad game. Our brightly colored salad is filled with richness, sweetness and a hint of saltiness to satisfy all your cravings.
Ingredients
For the dressing:
- ¼ cup extra virgin olive oil
- ¼ cup Willo basil
- 2 tbsp sherry vinegar
- 2 tsp maple syrup
- 1 tbsp minced shallot
- ⅓ cup plain yogurt
- Fresh-cracked pepper
For the salad:
- 1 clamshell Willo savanna
- ⅓ cup shelled pistachios
- 1 avocado, sliced or diced
- ½ cup sliced cucumber
- 1 cup cooked couscous
- Shaved parmesan
- Flaky sea salt
- Fresh-cracked pepper
Savanna Brassica Basil
Directions:
- Place all dressing ingredients in a blender and blitz until combined. Taste and adjust. If too acidic, add a splash more of maple syrup.
- To assemble the salad, combine the greens, pistachios, avocado, cucumber, and couscous in a large bowl. Add a small amount of dressing at a time and toss well until it’s at your desired consistency. Top it off with a shaved parmesan, a generous pinch of flaky salt, and a healthy amount of fresh-cracked pepper.
