Savanna spinach pistachio avocado salad

About the recipe

We created a bountiful, delicious recipe to change up your salad game. Our brightly colored salad is filled with richness, sweetness and a hint of saltiness to satisfy all your cravings.

Ingredients

For the dressing:

  • ¼ cup extra virgin olive oil
  • ¼ cup Willo basil
  • 2 tbsp sherry vinegar
  • 2 tsp maple syrup
  • 1 tbsp minced shallot
  • ⅓ cup plain yogurt
  • Fresh-cracked pepper

For the salad:

  • 1 clamshell Willo savanna
  • ⅓ cup shelled pistachios
  • 1 avocado, sliced or diced
  • ½ cup sliced cucumber
  • 1 cup cooked couscous
  • Shaved parmesan
  • Flaky sea salt
  • Fresh-cracked pepper

Directions:

  1. Place all dressing ingredients in a blender and blitz until combined. Taste and adjust. If too acidic, add a splash more of maple syrup. 
  2. To assemble the salad, combine the greens, pistachios, avocado, cucumber, and couscous in a large bowl. Add a small amount of dressing at a time and toss well until it’s at your desired consistency. Top it off with a shaved parmesan, a generous pinch of flaky salt, and a healthy amount of fresh-cracked pepper.
